Installation of nitrogen to protect the wine in the tanks

Protecting must and white wine from oxidation is crucial for its quality. Closed and open tanks with pneumatic (floating) covers should be equipped with appropriate instruments for dosing and maintaining micro-pressure of nitrogen in these tanks. Before filling the tank, it should be supplemented with an appropriate portion of nitrogen. Experience shows that protecting wine only during pressing will not protect it from oxidation at later stages of production, i.e. during wine maturation or its storage.
