Advantages of the flotation process for the preliminary clarification of must:
- fast clarification of must
- addition of enzymes, carbon and bentonite before the flotation process is possible without any problems
- the dry matter content of the floated musts is less than 1%.
- partial oxidation of free phenols using air or nitrogen

Flotation is a faster and more efficient clarification of must. Together with the faster and gentler clarification of must, the oxidation of phenols is achieved in a shorter time. The nitrogen content in the must is not reduced any more than in sedimentation.
