Liquefaction and saccharification of mealy material
Liquefies and dextrinizes gelatinized, digested starches in farinaceous mashes at a temperature range of 50 ‐ 95 °C. The main activity is based on a thermostable and acid-tolerant α-amylase (EC.3.2.1.1).
